Fruits and Vegetables
By definition, fruit to such edibles
as tomatoes,
string beans, corn, peas, and mustard, as well as to nuts, scorns, oranges,
peaches, and others. Tomatoes, string, beans, and peaches, for examples, are
fruits that are eaten whole. Peas, corn, and mustard are the seeds, or
fertilized ovules, of fruits. Flour is ground from the fruit of the wheat plant,
and coffee is made from the seeds of the coffee fruit, or bean.
Some fruits, called accessory fruits, are partly derived from flower structures
other than the ovary. Most accessory fruits, such as bananas, papaya,
cucumber, and gooseberries, are fleshy throughout and are thus called false
berries. Apples and pears are accessory fruits called pomes; the edible part is
the fleshy exterior, and the true fruit form the core.
Lettuce,
lactuca sativa, of the family Compositae, is the most popular of all salad
crops. It is a cool-season vegetable,
growing best at temperatures between 15o and 18o C (59o and 64o F). It will
often bolt, or produce seed prematurely, if it is grown in mid summer heat.
